This Mexican rice recipe is very easy and quick to make. The taste of chilli garlic paste added along with vegetables makes it a perfect recipe.
INGREDIENTS

3 Cups Dual Taste Rice

0.5 Cup sliced onions

0.5 Cup sliced capsicum

1 Cup mixed boiled vegetables

3 tablespoon oil

0.5 Cup chopped tomatoes

Salt to taste

Carrot for garnishing

5 pieces garlic (lehsun) cloves

5 pieces whole dry Kashmiri red chillies
Cooking Method
Step 1 : Heat the oil in a broad non-stick pan, add onions and sauté on a medium flame for 1 to 2 minutes.
Step 2 : Add the prepared chilly-garlic paste, tomatoes and capsicum and sauté on a medium flame for 1 to 2 minutes.
Step 3 : Add salt and 2 tbsp of water and sauté on a medium flame for a minute.
Step 4 : Add the mixed vegetables and 1 tbsp of water, mix well and cook on a medium flame for 1 to 2 minutes, while stirring occasionally.
Step 5 : Add rice and a little salt, mix well and cook on a medium flame for 2 to 3 minutes, while stirring occasionally.
Step 6 : Serve hot.
